BRIE EN CROUTE

1/2 pkg (1 sheet) Pepperidge Farm Frozen Puff Pastry Sheets (not pastry shells-they are in similar boxes so be careful when purchasing)
1-2 Tbsp brown sugar
1 handful dried cranberries
1 handful toasted coarsely chopped nuts (pecans, walnuts, almonds work)
1 small round brie


OPTION (makes it shiny)
1 egg
1 Tbsp. water

THAW pastry sheet at room temperature 30 min. Preheat oven to 400F. Mix egg and water.

UNFOLD pastry sheet on lightly floured surface. Roll slightly to remove creases (or not, hands work just as well). Cut off corners to make a circle. Sprinkle sugar, cranberries and almonds in center of pastry about the size of the cheese round. Top with cheese. Fold two opposite sides over cheese. Fold remaining two sides onto the round, pleating and trimming to fit. Press edges to seal. Place seam-side down on baking sheet. Decorate top with pastry scraps if desired (I add xmas trees at Xmas, bunnies at Easter, etc). Brush with egg mixture (optional, just makes it shiny).

BAKE 20 min. or until golden. Let stand 15 minutes. Serve with crackers, baguette rounds, apples, pears, etc.
