QUICK CHERRY CRUNCH
[A well-flavored, easy cherry pastry from Joy of Cooking]
Preheat oven to 350 degrees.
Mix and let stand 15 minutes:
½ c. cherry juice
1 ½ Tbsp. quick-cooking tapioca
Melt in a large pan:
½ c. butter
Mix with it:
1 to 1 ½ c. brown sugar
1 c. all purpose flour
1 c. quick-cooking oatmeal
¼ tsp. each double-acting baking powder, salt, and baking soda
Put half of this mixture into a 9 x 9 x 2 inch baking pan.
Scatter over it:
2 c. drained canned red cherries
and the juice and tapioca mixture.
Cover the fruit with the other half of the pastry mixture.
Bake 30 to 35 minutes or until brown.
