CHINESE SPARERIBS (Serves 6 - I doubled the recipe)
INGREDIENTS: Country-style pork spareribs, boneless (approximately one large piece per person) 2 Tbsp oil One onion, sliced in wedges 3 or 4 carrots, thinly sliced 1 small ginger root, very thinly sliced
SAUCE: 1/2 cup sugar 1/4 cup soy sauce 3/4 cup vinegar 1 tablespoon cornstarch, mixed with 1 1/2 cups water
DIRECTIONS: 1. Brown ribs in the oil, then place them into a baking dish. 2. Saute onion, carrots, and ginger in the pan after browning the meat 3. Add sauce to the vegetables 4. Simmer for a few minutes until the veggies start to soften 5. Pour sauce over spareribs 6. Cover and bake at 400 degrees for 1 hour.
