MANDARIN ORANGE-ALMOND SALAD
(serves 4-6)

Salad fixings:
3/4 head lettuce (romaine or iceberg), torn into bite-size pieces
1/2 red onion, sliced thin
1 can mandarin orange segments, drained
1/2 cup carmelized almonds
To carmelize almonds:

In a frypan, heat 2 Tbsp. sugar with 1/2 cup slivered almonds over medium heat. Keep stirring until sugar carmelizes to coat almonds to golden brown color; it takes a little while. Spread on waxed paper or aluminum foil to cool.


Dressing (make ahead and chill):
1/4 cup salad oil
2 Tbsp. vinegar
2 Tbsp. sugar
1/2 tsp. salt
Toss all ingredients together just before serving.
