FAVORITE QUICHE
(Adapted from Good Housekeeping Cookbook - serves 6)


1 9” unbaked deep dish pie shell, well chilled
1 Tbsp. soft butter or margarine
4 eggs
2 c. heavy cream
¾ tsp. salt
pinch nutmeg
pinch sugar
pinch cayenne pepper
1/8 tsp. pepper
1 c. grated swiss cheese

1 package slice of ham
1 tree broccoli


Preheat oven to 425 degrees. Rub butter over surface of unbaked pie shell. Dice ham and lightly brown in skillet. Cut up broccoli into small pieces. Combine eggs, cream, salt, nutmeg, sugar, cayenne, and pepper; with eggbeater, beat just long enough to mix thoroughly.

Sprinkle pie shell with cheese, then diced ham and broccoli pieces; pour in cream mixture. Bake at 425 degrees for 15 minutes. Reduce oven heat to 300 degrees; bake about 40 minutes or until silver knife inserted in center comes out clean. Serve at once.

[Note from Paula: I have used frozen pie crusts, but I prefer Pillsbury or other brand pie dough that you roll out into pie plate.]
