SLOW COOKER RED CABBAGE
(Adapted from Just a Pinch -- serves 10 to 12)
1 large head red cabbage, washed & coarsely sliced
1 medium onion, chopped
3 Granny Smith apples, peeled, cored and sliced
2 tsp. salt
1 cup hot water
1/2 cup apple juice
1 1/2 Tbsp. sugar
1/2 c vinegar (red wine or apple cider)
3 Tbsp. butter
OPTIONAL additions (any or all)
1/2 tsp. caraway seeds
1/4 tsp. freshly ground nutmeg
1/2 tsp. ground cloves
Place all ingredients into crockpot in the order listed. Cover and cook on low for 6 to 8 hours (high 3-4 hours). Stir well before serving.
This fits into a 6 qt. slow cooker. For smaller (4-5 qt.) crockpot, use small head of cabbage and omit apple juice.
