Bake 6 red sweet potatoes (about 1 hour at 350 degrees-like a baked potato)
Cut each potato in half and scrape out of skin into large bowl.
Add the following:
4 Tbsp. butter
4 Tbsp. brown sugar
8 Tbsp. cream cheese
1/2 tsp. cinnamon
dash of nutmeg
dash of ginger
salt & pepper to taste
Mix all ingredients with beater and spoon back into skins.
Bake 15 minutes at 375 degrees.
[Note from Paula: I put a tiny pat of butter and a small sprinkle of brown sugar over top before baking the second time. Next time I will also broil at the end for a moment or two.]
