ZUCCHINI CASSEROLE
6-7 zucchini, sliced
1 lb. ground beef or ground turkey
1 medium onion, chopped
1 cup uncooked Minute Rice
1 tsp. seasoned salt
1 tsp. garlic powder
1 tsp. oregano
1 tsp. pepper
1 pint cottage cheese
1 can cream of mushroom soup
1 cup cheddar cheese
Cook round sliced zucchini in boiling water until barely tender.
Saute beef or turkey with chopped onion until meat is browned. Drain grease.
Add rice and seasonings.
Place half of zucchini in bottom of 2 1/2 qt. rectangular (Pyrex) dish.
Cover with beef/turkey mixture.
Spoon cottage cheese over all.
Add remaining zucchini.
Spread soup over all.
Sprinkle solidly with cheese (I sometimes use more than quantity recommended).
Bake uncovered at 350 degrees for 40 minutes or until bubbly hot.
Serves 6-8. Enjoy!!
