6 small zucchini, cut into 1/2 inch slices
2/3 cup commercial sour cream
1 Tbsp. butter or margarine
6 Tbsp. grated sharp cheddar cheese
1/2 tsp. seasoned salt
3 Tbsp. fresh bread crumbs
Preheat oven to 375°F. Simmer zucchini 10 min. in water to cover. Drain and turn into 8" pie plate. (I used a Corningware square dish.)
In a small saucepan combine sour cream, butter, 1/4 c. cheese and salt. Heat, stirring until blended. Pour over zucchini. Top with bread crumbs and 2 Tbsp. grated cheese. Bake 10 min. or until crumbs are golden. Let stand 5 min., then serve. Makes 4 servings.
